250 g flour
2 teaspoons of baking powder
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
160g unsalted butter (at room temperature)
230 g brown sugar
2 eggs
3 very ripe bananas (mashed)
1 pinch of salt
50 g of chopped walnuts

Preparation

Preheat the oven to 170ºC.
Grease a rectangular mold (about 23 X 13 X 6 cm) with butter and sprinkle with flour. Mix on one side the flour (sieved with a sieve), the yeast, the nutmeg, the cinnamon and the salt. On the other hand, mix the butter, sugar and eggs, one by one. Add the mashed bananas and mix until smooth.
Add the flour mixture to the banana mixture and mix well. Finally, add the nuts and give a few more turns.
Pour the mixture into the mold and bake for 45 minutes in the upper part of the oven or until the cake has taken color on top and separates from the sides of the container. If the top turns brown too soon, cover with some aluminum foil. Inserting a toothpick into the center should come out clean when cooked.
Let rest for 5 minutes before unmolding and cooling on a wire rack.
