The Pan de Cádiz, as its name indicates, is a sweet baked in the form of bread made from marzipan and filled with a sweet potato and fruit dough. It has a very decorative presence due to its showy shape and its colorful cut that the candied fruits give it.

Ingredients

  • 300 gr of ground almonds
  • 300 g of icing sugar
  • candied fruits
  • 2 eggs
  • syrup
  • 2 roasted sweet potatoes

Preparation

  1. First of all, we mix the egg whites with the ground almonds and the icing sugar, kneading the whole thing until we have a consistent dough.

  2. Next we take the candied fruits and cut them into thin strips.

  3. Next, we separate the dough that we previously prepared into three equal parts

  4. We extend one of the parts and place half of the pieces of candied fruit on it.

  5. We mix the next part with the mash of the two roasted sweet potatoes and a little more sugar.

  6. On the fruits we spread this second part of the dough

  7. On top, we distribute the rest of the fruit

  8. Cover the walls and the cover with a third of the dough, giving it an oval shape to simulate the shape of a bread, also making several grooves with the help of a knife.

  9. Next, with a kitchen brush we spread the syrup on the bread

  10. We put the bread from Cádiz in the preheated oven at 200 degrees for ten minutes at medium height

  11. Then, we activate the grill and brown the surface for another ten minutes.

      Hello Charito, the yolks are optional to put them in. You could join them with the sweet potato batter.
