300 gr. Of flour
4 eggs
the rind of 1 lemon
100 gr. sugar
anise seeds
cinnamon
250 ml. milk
20 gr. baking powder
80 gr. of butter
500 gr. Catalan cream
pine nuts or almonds
sour cherries or candied fruits
icing sugar for garnish

Preparation

Put the sifted flour in the shape of a volcano on the counter or a fairly large bowl and add the sugar, milk, 3 eggs, crushed anise, grated lemon rind and a little cinnamon in the center. We mix all the ingredients well with our hands until we have a fine and homogeneous paste.
Then we add the softened butter and yeast. We knead all the dough again and stretch it out on the worktop sprinkled with flour and give it the typical oval shape of pancakes, greater in length than in width.
Transfer the coke to a baking sheet covered with non-stick paper and let it rest in a warm place (in the oven that is turned off, for example) until it doubles in volume (depends on the temperature).
We make some grooves in the dough so that we can distribute the Catalan cream on top in the way we like. Then we sprinkle with the candied fruit or the cherries and the pine nuts or almonds.
We bake it at about 180 degrees for 20-30 minutes until the coca is golden and puffed.
