Today I bring you a different dish with one of my favorite fish, Cod. It is quite simple and fast and if your children like fish, they will love this scrambled eggs.

Ingredients

  • 300gr. cod
  • 2 onions
  • 2 potatoes
  • 5 eggs
  • Sal Island
  • Buy

Preparation

  1. In a frying pan, put oil (it doesn't matter if we go too far, we will drain it later), cut the onions in julienne strips and sauté until almost caramelized. Add the cod previously desalted and cut into strips and sauté for a few minutes.

  2. In another frying pan we are frying the straw-cut potatoes until they are well golden. In a bowl, put the eggs and stir (do not beat!). Add the potatoes to the onion that we will have drained and then add the eggs. We stir a little, it has to be juicy.

  3. When plating, we sprinkle a little parsley on top so that there is that contrast of colors that always gives a different point to the dish.
