When we cook with pineapple, one of its best companions is the pork tenderloin. This time we will do it with sirloin, more tender and with a better presentation, and instead of in a casserole we will cook the pork in the oven with the practices roasting bags. You will see what a richer bittersweet touch the pineapple juice contributes to the roast sauce.

Ingredients

1 whole pork tenderloin of about 500-600 gr
5 slices of bacon
4 pineapple slices
1 glass of natural pineapple juice
1 splash of sweet wine

Preparation

Season the sirloin with salt and pepper and cover it with the bacon strips, leaving them well attached to the meat.
We put it in the bag, add a tablespoon of water and close it well, leaving a little free space with respect to the meat.
Bake the sirloin at about 190 degrees for 20 minutes. After this time we take out the sirloin, open the bag and add the pineapple slices, the juice and a splash of wine.
We close the bag again with the seal and make a small hole in one of the upper corners of the bag to allow a little steam to escape and the sirloin to brown a little. Bake the pork for approximately 30 more minutes or until we see that it has a golden color.
We serve the sliced sirloin with the sauce and a few pieces of pineapple. We can bind the sauce with a thickener to make it thicker, or simply beat it with pineapple pulp and strain it later.

Another option: Make this recipe with chicken or turkey instead of pork tenderloin.
