Ingredients

  • 500 gr. Of flour
  • 300 gr. of butter
  • 250 ml of water
  • a pinch of salt
  • 500 gr. sweet quince
  • frying oil
  • 400 gr. sugar

Preparation

  1. Place the flour with the salt in the shape of a volcano and add half of the chopped butter in the center. We knead everything until we get an earthy dough.

  2. Add the water little by little until you get a smooth dough. Then we let it rest for about 20 minutes.

  3. After this rest time, stretch the dough until it is 1 cm. of thickness. We spread it with 50 grams of melted butter, sprinkle with a little flour and fold in three. We roll out the dough again and spread it again with another 50 grams of butter. Sprinkle with flour and fold again in three. Let the dough rest again in the fridge for about 30 minutes.

  4. After this time, we stretch the dough until it is about 3 mm. We cut squares of 8 cm. For each cupcake we will use two.

  5. In one we will put a little piece of quince jelly, spread it out and cover it with the other sheet of dough, so that the tips of the two sheets of dough form a star. We can use water to better fix the masses between them. In addition, we will tighten them well with our fingers.

  6. Finally, we fry them well in abundant oil and sprinkle them with sugar.
