We love risotto! It has that touch of mellow that I look for in a rice, and this one that I present to you today is more than delicious. Very simple to prepare and it is perfect to surprise your guests, because sow, yes or yes, it comes out great. So put on your apron and prepare this risotto with boletus and parmesan cheese with me, because it is delicious.

Ingredients

  • 1 cebolla
  • 80 ml oil
  • 30 grams of butter
  • 70 ml of white wine
  • 500 gr of arborio rice or carnaroli
  • 250 gr of parmesan
  • Vegetable broth
  • 250 grams boletus

Preparation

  1. In a saucepan, sauté the onion with half the butter, and when it is transparent, add the rice and stir for a few minutes. Add the white wine and let it evaporate, so that the rice is properly soaked and without stopping to stir the rice.

  2. Cut the boletus into slices and add them to the rice. Let them cook a bit and acquire the flavor of white wine, and after about 4 minutes, add half of the vegetable broth. Keep stirring and gradually add all the broth as it evaporates.

  3. After about 20 minutes add the salt, and turn it off (if the rice is hard, leave it a little longer, and if you see that it is done before, remove it from the heat so that it does not go over).

  4. Add the leftover butter and the grated Parmesan, and sauté everything very quickly so that it is smooth and creamy.

  5. Serve the risotto on a flat plate, and grate a little more Parmesan cheese on top, some small flakes or a comb that you can make in the oven.

  6. Sprinkle with parsley and a pinch of pepper and... Let's eat!!
