500 ml. Water
500 gr. flour
10 eggs

Preparation

Preheat the water in a saucepan together with the butter and a pinch of salt. When it starts to boil, add the flour, stirring quickly with a wooden spoon until the mixture detaches from the walls, for about 10 minutes. Let the dough cool.
Then add the eggs one by one to the dough, as we integrate them. Pour the mixture into a pastry bag with a star nozzle.
We pour dough snails into a pan with plenty of hot olive oil and fry them until they have a golden and uniform color. Place them on kitchen paper to absorb excess oil.
When they cool down, cut them in half and fill them with pastry cream. We decorate them with cherries in syrup and sprinkle with powdered sugar.
