These Zamoran canes are delicious, a typical sweet from there that makes you want to eat at all hours

Ingredients

  • Puff pastry: 200 gr. Of flour
  • 150 ml. olive oil with low acidity and mild flavor
  • 150 ml. milk
  • sugar for dusting Cream: 200 gr of sugar
  • 4 tablespoons of cornstarch
  • 2 eggs + 4 yolks
  • 1 l. fresh whole milk
  • lemon zest
  • 1 cinnamon stick

Preparation

  1. We start preparing the puff pastry by mixing and kneading the flour with the oil and milk in a bowl until we get a compact dough.

  2. We stretch it to crush it and refine it on a floured countertop and with the help of a rolling pin and cut it into long rectangles

  3. We roll these strips into tubes or confectionery tubes (if we use another cylindrical object, it must be suitable for being placed in the hot oil) and let them rest for a few minutes.

  4. Then we can fry the reeds in hot oil and extract them from the tube

  5. We can fry them again if we want to leave them crispier inside.

  6. We make the pastry cream by gently boiling the milk with a cinnamon stick and the zest of a lemon

  7. Meanwhile we beat the eggs and the yolks with the sugar and cornstarch until it is a thick and mounted cream.

  8. We add the boiling milk little by little while we stir and put this cream over low heat so that it thickens

  9. Then we remove it from the heat and let it cool.

  10. Now we can fill the joints, much better with the help of a pastry bag.
