Alfajor is a sweet made from a paste of almonds, honey, sugar and spices. Its flavor is very aromatic, and it reminds us of those homemade sweets that taste like anise or cinnamon.

This Christmas we should honor the alfajor by preparing a good tray at home. The rite of preparing our own traditional sweets should not be missed. The kitchen, like the popular songs and jokes, is also transmitted from you to you, without books or computers as intermediaries.

300 gr. almonds
100 gr. of hazelnuts
100 gr. of peanuts (I allow myself this license)
400 gr. grated natural bread (the breadsticks are also worth
hard donuts of wine…)
10 gr. ground cinnamon
20 gr. of anise seeds
1 gr. clove
75 gr. sesame seeds or sesame
450 gr. Lamb
325 gr. sugar
325 ml of water
sugar glass

Preparation

We start by lightly toasting the almonds, hazelnuts and peanuts in a pan. When they are ready, we grind them with a grinder or a mincer until they are almost like flour, but trying to leave some small pieces. To this chopped nuts, we add the cinnamon, cloves, anise and sesame. We booked.
With 125 gr. of sugar and 125 ml. of the water we prepare a thick syrup over low heat and let it cool.
Now we heat the honey until it boils and we add it to the nuts, already mixed with the breadcrumbs. We mix and add the syrup. We knead very well until a very homogeneous paste is left. We can now take portions of this dough and give them the rounded and elongated shape of the alfajores and let them rest on baking paper.
Meanwhile, prepare another syrup with the rest of the water and sugar. When it is warm, we submerge the alfajores, drain them and bathe them in the icing sugar.
We put them back on the paper to dry before we can try them.
