Amaretti, bitter almond cookies

Slightly bitter, that's why Italians call them Amaretti biscuits, these crunchy almond cookies are ideal to serve as tea pastries or to use in other desserts that require dough from biscuits or hard biscuits. For example, we can crush them to make the base of the cheesecake or chop them up to include them in a pudding. Anything else? Surely you can think of more recipes in which to put the amaretti.
