200 gr. long or steamed rice
400 gr. peeled prawns
2 dientes de ajo chopped
1-2 avocados
1 lemon (zest and juice)
fish soup
1 chilli, minced
grated ginger
2 Bay leaves
chopped parsley
pepper

Preparation

We heat the fish broth with the bay leaf. When it boils, add the rice, salt a little and let it cook for about 20 minutes or until it is tender. We drain and reserve.
Lightly brown the garlic in a pan with oil, add the chilli, ginger, lemon zest, finely chopped parsley and the prawns. When the seafood takes color, season it with salt and pepper and water with part of the lemon juice. Cook for a couple more minutes and remove from the heat.
Peel the avocados, pit them and cut them into cubes. We sprinkle them with lemon juice so that they do not oxidize while we continue with the recipe.
Mix the drained rice with the prawns, the avocado and season with salt and oil.
