Kubak, a Chinese puffed rice dish

Kubak is one of the famous dishes in Chinese restaurants. Is about a hot and very crunchy puffed rice, to which some sauce is added (soy, oysters ...) and other ingredients such as seafood, vegetables or mushrooms. The mixture of these foods causes a sizzling of the rice grains that, little by little, are hydrated with the sauce, without losing firmness.

First you will have to cook the rice in a saucepan with water, for about 20 minutes. After that time, we drain it and run it through cold water. We drain again and we place it on a baking tray, which we will have covered with baking paper.

Now we let it dry in the oven for half an hour at 150º. When the time is up, we pour it into a container. Right at that moment you can go making the accompaniment of the rice. Vegetables or prawns will be perfect. When the rice is already warm, we put it in a saucepan with plenty of oil and we take it to the fire. Lor do we have to fry to make it golden and at the same time, crunchy. When you see it inflate, remove it with the help of a slotted spoon.

Preparation of the sauce

For the sauce, we put a little oil in a wok and sauté the sliced ​​chives and zucchini in strips until they are crisp and not very done.

Add the mushrooms and, later, the peeled prawns and the soy sauce or oysters. When the sauce is thick and hot and once the puffed rice, we add it immediately and very hot to the wok.

  • 200 grams of rice
  • 1 cebolla
  • 1 Zucchini
  • 1 Carrot
  • 120 grams of prawns
  • 25 grams of flour
  • 2 tablespoons soy sauce
  • 100 ml of vegetable broth
  • Olive oil
  • Sal Island

Preparation

  1. Cook the rice in a pot with water for about 20 minutes.
  2. After that time, we drain it and dry it with a piece of kitchen paper.
  3. We place the rice on the oven tray. Place parchment paper on the tray to prevent the rice from sticking.
  4. You take it to the oven for about 30 minutes and at 150º.
  5. Meanwhile, you are going to chop the onion, carrot and zucchini, very finely.
  6. In a frying pan or wok, add a drizzle of oil and sauté the onion. After a couple of minutes, you add the carrot and zucchini.
  7. When the vegetables are poached, it will be time to add the prawns and sauté for a couple more minutes.
  8. Add the flour, give it a few turns and add the soy sauce and the broth.
  9. Let the sauce thicken and meanwhile, in a frying pan you fry the rice.
  10. Finally, you will put the rice in some plates on it, the mixture of prawns and vegetables. Delicious!.

Preparation

  1. The cooking of the rice is the same as in the previous version. We have to cook it for 20 minutes, take it to the oven for half an hour and then fry it in plenty of olive oil.
  2. On the other hand, in a frying pan or in a wok with a splash of oil, we will sauté vegetables. To do this, we chop them finely.
  3. First we add the onion and let it fry for a couple of minutes. Then we add the carrot and zucchini. Add a pinch of salt.
  4. When the vegetables are ready, it is time to add the soy sauce and oyster sauce. We stir well and add the rice and about 100 ml of water.
  5. Add the flour, so that it thickens while the sauce cooks with the Ku-Bak rice.

In this case, you can integrate the rice into the cooking, or you can serve it separately and have each guest mix it on their plate. Similarly, it is a recipe that also admits meat of chicken. You would have to cook two chicken breasts and shred them. As simple as that!.
