Tricks to prepare good lentils
- We must not forget put the lentils to soak half an hour before, if the lentil is large, so that they recover their original shape and hydrate. If you choose a brown lentils, you don't need to soak them. Once this time has passed, when we put the lentils to cook, we will calculate that the water covers them with about three fingers above them.
- For prevent them from falling apart and separate from the skin, it is best to do them over low heat, without rushing so that all the flavors mix and they come out perfect.
- The ingredients of the lentils. Prepare ham in small cubes, a ham bone, a chicken thigh or skeleton, sliced chorizo stew, carrot, vegetables such as leek, potato and a good onion. Make sure that the ingredients you use are of quality for a better flavor to our lentils.
- It is important that to give it that special touch of the grandmother, what I recommend is that before adding all the ingredients to the casserole, make a sauce with the sliced carrot, onion, garlic and chorizo, to enhance the flavor of these ingredients. It is not necessary to brown the ingredients, but to mix all their flavor, and once this is done, (about 10 minutes of stir-fry), add them to the casserole with a bay leaf, some peppercorns, a little saffron and a glass of white wine.
- Once you have everything in the pot, do not remove the lentils. Let them cook slowly, for an hour or an hour and a half, depending on the size of the lentil, over medium-low heat.
- If once this time has passed, you notice that the lentils are very runny, take a few lentils and puree them. Add them to the casserole and you will see how they will be thicker and with better flavor.
