Do you have ripe avocados at home and you don't know what to do with them? This recipe that we have prepared for today is a real delight. It is very simple to prepare and it serves us both for a starter and for a good weekend breakfast.

There is nothing better than watching the egg yolk melt inside the avocado, spread with the toast and mix with the flavors of good smoked bacon cubes…. Yum!

Of course, it is sacred to have a ripe, buttery and very creamy avocado.

Ingredients

  • 1 large ripe avocado
  • 2 eggs
  • smoked bacon cubes
  • 2 slices of toast
  • salt maldon

Preparation

  1. Preheat the oven to 180 degrees. Crack each of the eggs into a bowl and set aside.

  2. Cut the avocado in half and remove the pit. Depending on the size of the bone we have to look at the size of our egg. Keep in mind that the hole we make in the avocado must be large enough to put the egg on top. If the hole is small, do it with the help of a slightly larger knife.

  3. In a baking dish, place the two avocado halves and add each of the eggs to the hole in our avocado, using a medium spoon to carefully remove the yolks from the container and place it in the center of the avocado.

  4. Top it with a little salt and ground pepper to taste, and bake for about 15 minutes. Cooking time may vary depending on the size of the avocado. So go checking from time to time the consistency of the egg so that it does not become too much. The interesting thing is that the yolk is raw so that it is juicy.

  5. minutes before removing the avocado from the oven, sprinkle the crumbled bacon on top of the avocado and return to the oven for 5 more minutes.

  6. Now you just have to prepare some very warm toast and spread the avocado with the egg on them.
