Before starting with the recipe itself, we must explain some aspects. This dish is based on the famous "Special meat" that usually serve most of the pizzerias on the northwest coast of Cadiz. The variant is to bake it and thus gain in flavor and juiciness.

Ingredients

1 pork tenderloin
1 green pepper
Mushrooms
1 cebolla
2 potatoes
Sal Island
Pepper
Cumin
Rosemary
Sherry vinager
Soy sauce

Preparation

Cut the sirloin into rather thin and small medallions
We arrange them in a bowl and add the spices and vinegar, stir well and leave them in the fridge the day before.
The next day we arrange the meat in an oven tray, cover with the onion and the pepper well cut
Add soy sauce to get all the flavor
We will also add, as desired, whole garlic cloves, sprigs of rosemary or thyme and any type of wild herb that we like.
We put in the oven for 15 minutes at 200 degrees, we remove everything so that the juices mix and we put it back in the oven
Meanwhile we will put water to boil and cut the potatoes into rather thick wedges.
When the water boils we will add a handful of salt and the potatoes, the idea is to blanch them a bit, to release the starch
When they are soft it is time to add them to the rest of the ingredients.
Add the potatoes and mushrooms and stir a little
We wait for the potatoes to brown a little and ready to eat
