With some tender beef tenderloins (or pork) we are going to prepare a dish worthy of being part of a festive menu but very simple to make. The meat is grilled, therefore we only have to stop a bit to make the sauce. All in all, this dish is ready in half an hour.

Ingredients

  • 4 beef tenderloins
  • 200 ml. meat broth
  • 20 gr. canned truffles with their juice
  • 250 ml of cream
  • olive oil
  • pepper
  • shawl

Preparation

  1. We start by seasoning the tenderloins and browning them on both sides in a non-stick pan. When they take color, we remove them and keep them warm (oven, for example)

  2. Meanwhile we prepare the truffle sauce. Put the veal fat in the same pan, including the meat broth, together with the truffles and their juices and cook over medium heat until reduced to a slightly thick sauce. We pass this sauce through the Chinese and put it back in the pan.

  3. Then, we add the cream and let it reduce again.

  4. Season with salt and pepper again and stir the meat a couple of times in the boiling sauce.
