This cake has the same flavor as the traditional roscón de Reyes y It is much easier and faster to make since its dough does not require that long resting and fermentation time. We will present the cake to the use of the roscón, open in half, stuffed and decorated with candied fruit.

Ingredients

  • 125 gr. unsalted butter
  • 150 gr. icing sugar
  • 1 teaspoon of honey
  • 3 eggs
  • 70 ml. milk
  • The skin of half a lemon
  • the orange peel
  • 1 tablespoon orange blossom water
  • 250 gr. of special pastry flour
  • 1 sachet (16 gr.) Baking powder
  • candied fruit in pieces

Preparation

  1. Beat the softened butter slightly in the microwave with the sugar and honey until a creamy and whitish mixture is obtained. We can do it better with the help of electric rods.

  2. We are adding and mixing the eggs one by one in the previous cream. Then add the milk, the orange blossom water and the citrus zest. Mix well again.

  3. Add the flour together with the yeast to the dough little by little, better if it is with the help of a strainer to integrate it better.

  4. Lightly flour the candied fruit pieces and place them in the bottom of a previously buttered and floured mold.

  5. We put the cake in the oven preheated to 200 degrees and lower to 180. Let it bake for 35-40 minutes or until we check that the cake is dry on the inside and golden on the outside.
