As a general rule, children are declared enemies of the onion. We can spend all morning cooking the most extraordinary and succulent stew that we can imagine, that if at the time of putting it in the mouth the child detects even a tiny bit of onion, it automatically rejects it.

I was one of those girls. I found the piece and my life was sinking, literally. I remember it well, because I was always very picky about vegetables. My mother used to say: "But if you don't even notice it, try it and you'll see." What is not noticeable? Ha! Of course I did, my senses were opened to such an extent that I was able to smell a small piece of onion for miles around.

But there is a way to cook onion that will make many children end up not resisting it: caramelized onion. Already her own name makes her something kinderEven the child can feel a certain curiosity and, as it is sweet, it becomes a garnish of the most sweet.

Ingredients

  • 2 onions
  • Brown sugar
  • Balsamic vinegar
  • Olive oil
  • Sal Island

Preparation

  1. First we peel the onions and cut them into julienne strips. Then we will put them in a saucepan or frying pan with two or three tablespoons of olive oil and we will sauté them over low heat. We will have to move them well so that the oil is impregnated. We will then add a pinch of salt and let the onion gradually release the water and become transparent.

  2. When tender, add three tablespoons of brown sugar and cook over low heat for 20 minutes until the sugar caramelizes and the onion is a nice golden color. Of course, we will have to stir from time to time and be aware that it does not burn.

  3. Finally, we will add a jet of Modena vinegar, stir and leave for five more minutes until it completely evaporates.

  4. Caramelized onion is an ideal accompaniment to different grilled meats, such as pork (especially sirloin), beef or chicken breast. If we add to this a fantastic homemade mashed potato, I assure you that the children will not be able to resist the onion.
