Cevapcici: the fresh sausages of the Balkans

This kind of thick sausage made with minced meat, usually veal, is the queen of Balkan gastronomy. The cevapcici recipe varies from country to country depending on the type of meat used (beef mixed with pork or lamb) or in the way they are served.
