200 gr. puff pastry or digestive cookies
60 gr. of butter
200 gr. cream cheese
1 tablespoon of vanilla essence
50 ml. by Baileys
200 ml. whipping cream
60 gr. icing sugar
1 tablespoon of lemon juice
60 ml. boiling water
2 level tablespoons of powdered neutral gelatin
100 gr. chocolate to melt
2 butter spoons,
a little more cream without whipping

Preparation

We prepare the base of the cake by mixing the crushed cookies and the melted butter. We put this dough in the bottom of the mold pressing with the fingers and smoothing at the same time. We refrigerate.
We mount the cold cream and reserve it.
Bring the water to a boil and add the gelatin, stir and let it cook for a couple of minutes over low heat. Remove from heat and let cool.
Beat the cheese with the icing sugar until creamy and slightly assembled. Add the lemon, vanilla, gelatin mixture, and Baileys into the cheese mixture and beat again until well blended.
To finish off the filling, we add the whipped cream to the cheese mixture in an enveloping way, taking care that it does not sink too much.
Melt the chocolate for coverage, mix it with the butter and cream.
We assemble the cake, alternating layers of Baileys cream and cheese with threads of the chocolate one, which should not be very hot. Refrigerate the cake to set.
We can cover it with a layer of the same chocolate cream or decorate it with the same Christmas motifs, using a template.

Notes

Children's version: We can substitute the Baileys for some custard cream or meringue milk.
