We are in the time of peaches, so it is the perfect time to use them in our kitchen. I especially like yellow, sweet and tough peaches, but you can use the variety that you like the most in your recipes.

In addition to using peaches in desserts, we can prepare rich salty dishes to which the peach will provide a sweet spot, as is the case with this chicken with peaches baked

Ingredients

  • 1 pollo
  • 2 peaches
  • 40 gr. Of olive oil
  • Carrots 2
  • 2 onions
  • 150 gr. white wine
  • 100 gr. of water
  • 1 vegetable stock or chicken stock cube
  • 2 bay leaves
  • thyme
  • romero
  • salt and pepper
  • 2 tablespoons sugar
  • 1 tablespoon vinegar
  • 1 tablespoon cornstarch
  • 70 gr. rum

Preparation

  1. Cut the chicken into 8 pieces, season to taste and place on a baking sheet.

  2. Cut the onion into small pieces and the carrots into slices and add them to the chicken.

  3. Peel the peaches, cut into 4 pieces removing the pit and also place them on the tray.

  4. Add the thyme, rosemary and bay leaf.

  5. Pour the white wine and the stock cube dissolved in the hot water over the chicken.

  6. Place the tray in the oven preheated to 190ºC and bake for 50-60 minutes until the chicken is done.

  7. Reserve the chicken and peach chunks on the baking sheet.

  8. Pass the broth and the vegetables that we have cooked together with the chicken through the mixer-turmix until obtaining a homogeneous sauce. Reserve.

  9. Pour the sugar into a saucepan and heat over medium heat until caramelized.

  10. Then add the vinegar and rum, stir until well mixed.

  11. Add the sauce that we had reserved and the tablespoon of cornstarch dissolved in a little water. Stir until the sauce takes consistency.

  12. Pour the sauce that we just prepared over the chicken and peaches and place in the oven for 5-10 more minutes.
