We are not very wrong, the recipe we are dealing with is a traditional cold beet soup from several Eastern European countries (Belarus, Lithuania, Poland, Russia ...) Apart from beets, the chlodnik It is made with sour cream or yogurt, which slightly attenuates the purple color of the soup. As a garnish, it is usually put a slice of boiled egg. Ingredients

6 beets with their leaves
1 cucumber
6 radishes
1 garlic clove
chive
1 l. of natural yogurt (kefir, yogurt mixed with Greek…)
lemon juice
a teaspoon of sugar
pepper and salt
2 hard-boiled eggs

Preparation

We start by boiling the whole beets with some of their leaves and sugar in a pot with enough water to cover them.
When they are tender, let them cool.
Then we peel and chop them.
Meanwhile we grate the cucumber, the radishes (with the skin) and the garlic and mix it with the dill, yogurt, lemon juice and a little pepper and salt.
Then, we beat the beetroot or pass it through the mill and mix it with the yogurt mixture
Refrigerate the soup until it is very cold.
