Ingredients

For the sponge cake

  • 3/4 cup of water
  • 1/4 cup of sugar
  • 175 gr unsalted butter
  • 300 gr of milk chocolate to melt, cut into pieces.
  • 7 large eggs
  • 2 tablespoons of rum

For the raspberry sauce

  • 12 raspberries
  • 1/2 cup of sugar
  • 1 tablespoon cornstarch

For the heavy cream

  • 1 cup heavy cream or liquid cream
  • 1/2 tsp. vanilla
  • 2-3 tbsp. powdered sugar

Preparation

  1. Prepare an oven rack and preheat the oven to 180 degrees.

  2. In a pot, bring the sugar and water to a boil, and add the butter. Unify everything until the butter melts. Remove from the heat, and add the chocolate, and stir to just come together. Let stand.

  3. In a bowl, beat the eggs with the rum, and add all the previous chocolate cream.

  4. Place the mixture in a round mold, and put it in the oven in a bain-marie (with a container of water under the mold), for at least an hour or until you notice that the center is slightly firm. After this time, let it cool on the oven rack.

  5. In a saucepan, mix the raspberries with the sugar and bring the mixture to a boil. Lower the heat and cook everything for about 3 minutes and gradually add the cornstarch diluted in a little hot water to the mixture. Continue cooking over medium heat until thickened.

  6. Pour the mixture obtained into a bowl with a strainer so that the sauce runs out of lumps.

  7. Leave the mixture to rest in a bowl.

  8. Beat the heavy cream or liquid cream to the point of nine with the mixer rod.

  9. Add vanilla and icing sugar and mix everything well.

  10. Put the mixture in a piping bag to decorate the mousse.

  11. Use a heart-shaped cookie cutter to make the shape of the mousse. Reserve the rest of the mousse to make other shapes.

  12. Place the mousse on a plate, and decorate with the raspberry sauce and whipped cream.

  13. Garnish with raspberries and a sprig of mint.

    I love it and what it looks like !! but please put the complete recipes and as God commands that the ovens do not have a single position (up, down with or without ventilation ...) and large eggs ?? What are the sizes for? M, L, XL
