300 gr. of hake meat clean of skin and bones
100 gr. of butter
100 gr. of the white part of the leek
60 ml. wine or white vermouth
200 ml. whole milk
200 gr. cream
4 eggs
pepper and salt

Preparation

Chop the clean leek and fry it over low heat in a pan with the butter.
When it is well poached, add the fish, the wine and a little salt and pepper.
Let cook for just under a minute and immediately pour in the milk and cream. We wait for this preparation to reach the boiling point and remove from the heat.
Blend the fish in cream with a blender and mix it with the beaten eggs. Season again to taste.
Grease a baking dish with butter and breadcrumbs or cover it with baking paper.
Pour the cream and put the mold inside a larger dish filled with enough water to cover at least half of the mold.
We cook the cake in a bain-marie in a preheated oven at 160 degrees for about 30-40 minutes until the inside is dry.
Let the cake cool before refrigerating it.
