This recipe does not have much mystery, especially if we read its name in Spanish. What we can vary is the cheese to use. The British, who tend to use cheddar, tend to take this cauliflower gratin as a first course or as a garnish for meats, for example of roast beef.

This Cauliflower Cheese recipe is nothing more than a cauliflower au gratin dish but it is delicious and even the children will want to eat it

Ingredients

  • 1 cauliflower
  • 500 ml. whole milk
  • 2 cloves of garlic
  • 1 chive
  • 1 hoja de laurel
  • 75 gr. of butter
  • 200 gr. grated cheddar cheese and more to gratin
  • 50 gr. Of flour
  • 1 clove or nutmeg
  • black pepper
  • shawl

Preparation

  1. Prepare the cauliflower by cutting it into florets of the same size

  2. We put it to cook in a large pot with plenty of boiling water with salt

  3. We must leave it whole, because then it will continue cooking in the oven

  4. Once ready, we let it rest on a strainer so that it releases the water well.

  5. In a saucepan we prepare a base for a béchamel as follows

  6. We put the milk to heat until it reaches a boiling point together with the cloves, the onion and the bay leaf

  7. Cook for a couple of minutes and let it infuse off the heat for 10 minutes or less.

  8. Separately, melt the butter in a pan and add the flour.

  9. Remove over low heat for a couple of minutes so that the flour takes color and remove

  10. Gradually add the milk, beating with a whisk until well blended.

  11. Return it to the heat and, using a wooden spoon, stir constantly until the bechamel begins to thicken.

  12. After a few minutes, add the cheese and stir until it has melted into the sauce.

  13. Place the cauliflower in a baking dish and cover it with the cheddar béchamel

  14. Sprinkle with the cheese and cook in a preheated oven at about 190 degrees for 25-30 minutes, or until the cheese surface is golden.
