Mmm and for today a dinner fast, light and very very tasty: crab omelette with garlic. The key is to use good crab sticks and give them a touch of grace with a garlic sauce. The crab flavor will be enhanced and it will make an irresistible omelette for the little ones… and the oldest ones !! And, of course, it is interesting to use free-range eggs, with a good orange yolk and a delicious flavor.
I make the French omelettes as my mother taught me: generous amount of oil, high heat and fast curdling so that it is juicy on the inside and crispy on the outside. But, if you prefer, you can also prepare them over low heat to make them creamier.
I prepare them individual size in a small pan, but of course you can use a large one and make a single omelette, you just have to be more careful to turn it over.
