200 gr. peeled walnuts
5 tablespoons of sugar for the caramel
200 ml of water
500 ml. whipping cream
400 ml. whole milk
120 gr. sugar
2 tablespoons honey
60 gr. skimmed milk powder

Preparation

To caramelize the walnuts we put them in a pan together with 200 ml. of water and 5 tablespoons of sugar. Reduce the water over medium heat until caramelized.
We pass the walnuts impregnated in the caramel on a baking paper. Then we can sauté them in a pan with oil to make them even more crispy.
To start with the ice cream, mix the milk with the powdered milk on the one hand and the cold cream with the sugar on the other to assemble it with the whisk.
Mix the cream with the milk and put the cream in the freezer for about 45 minutes.
Stir and add the nuts and honey. Mix again and ice again until the ice cream is creamy. For this we must remove it every hour.
