With a taste very similar to meringue milk, this cake is an ideal dessert for the summer. It is taken cold and it is not too heavy. The curd allows us to solidify the cake without adding too much cream, flour or eggs.

Ingredients

500 ml. whipping cream
250 ml. whole milk
6 tablespoons sugar
2 sachets of curd
2 cinnamon sticks
the skin of 1 lemon
12 cupcakes or 200 gr. of cookies + 100 gr. of butter

Preparation

We put the cream with the sugar, the lemon peel and the cinnamon in a saucepan and wait for it to come to a simmer.
We also prepare the cake dough
Either we crush the biscuits and mix them with the butter or we simply crumble the muffins
We put this dough in the bottom of a tart mold to cover it, squeezing well with your fingers to leave it very compact.
When the cream is already boiling, remove it from the heat and add the two sachets of curd dissolved in the cold milk, stirring constantly.
Return to the heat and simmer for a couple of minutes, always stirring.
Remove the cinnamon stick and pour the mixture into the mold over the dough.
Let the cream cool before putting it in the fridge to set.
