The deviled eggs they are nothing more than stuffed eggs as made in the USA (deviled means 'spicy' or 'spicy'). Normally, like here, there are a thousand and one ways to fill them, although the simplest only mix the cooked yolk with a little tabasco, mayonnaise, mustard and a little paprika (spicy or not). These go with prawns or prawns cooked, but if you replace them with bacon you will also be right.

Ingredients

6 hard-boiled eggs
1 pot of mayonnaise
6-7 pickled gherkins
8 cooked and chopped prawns
Paprika (sweet or spicy)
Freshly ground black pepper
1 teaspoon Dijon mustard
A few drops of tabasco

Preparation

After boiling and peeling the eggs, we cut them in half, taking care not to break them. We take out the yolks and put them in a bowl and crush them with a fork. Add mayonnaise so that they are neither too dry nor do they disappear in the sauce. Stir.
Add the mustard, a twist of pepper, a few drops of Tabasco, the chopped gherkins and the prawns, also cut into small cubes. Stir with a fork and fill each egg half with the mixture.
Place the eggs on a tray and put a little more mayonnaise on top; sprinkle with paprika (spicy or not, or a mixture).

Notes

if you have leftover stuffing, don't throw it away! It is great for a sandwich or to fill some baskets or vol-au-vents.
