200 gr of your favorite cheese
100 ml of aceite oliva
70gr flour
1 medium onion, chopped
300 ml whole milk

Nutmeg

2 eggs

Preparation

The first thing we will do is chop the onion into small pieces while we poach it in a pan with a little olive oil.
Add the flour to the pan so that it browns, stirring constantly with the help of a spoon. We cook it well so that the croquettes do not taste like flour.
Little by little, we are adding the hot milk and without stopping stirring with the help of some rods until we see that the mass is becoming thick. We add nutmeg and a little salt.
We cut the cheese into pieces and add it to the dough. We mix everything well.
Remove the croquette dough from the pan and let it rest until it cools down a bit so that you can make the croquettes with your hands.
When we see that the dough is warm and does not burn, we make balls and we coat them with a beaten egg and we pass them in breadcrumbs.
In a frying pan we put olive oil and when the oil is hot, we fry the croquettes until they are golden. Once they are done, we take them out, and let them rest on kitchen paper to remove excess oil.
We serve them piping hot and accompany them with some fries or a salad.
