Preparation

Preheat the oven to 230 degrees and line a baking tray with parchment or non-stick paper. We booked.
Separate the yolks from the whites, leaving each yolk in a separate container.
We beat the whites with a little salt to mount them until stiff. Add the cheese being careful not to lower the whites. It is better to do it gently and with enveloping movements from top to bottom.
We put two generous tablespoons of the mixture in the tray that we have prepared for the oven. We spread them in the form of carefully fried egg whites and make a hole in the center, where the yolk will go.
Bake the white nests for three minutes and remove the tray. Carefully place each yolk on one of the nests and bake again for another three more minutes so that the yolk slightly sets and the nest browns.
