250 gr. raw and peeled almonds
250 gr. sugar
The skin of half a lemon
the white of an egg
Food colorings

Preparation

We cut the yellow part of the lemon skin as shallow as possible and put it in the glass of the robot along with the sugar. We program 30 seconds at progressive speed from 5 to 10.
With the spatula, we pour the remains of sugar from the walls downwards and add the almonds to the glass. We program another 30 seconds, this time at speed 6.
Now we incorporate the egg white and mix at speed 6 until it has been completely integrated into the dough, about 20 seconds. If the dough is not well bonded and homogeneous, we continue kneading it at spike speed for about 30 seconds.
We separate the dough into as many parts as there are colors or types of figure we want to prepare and we add its corresponding coloring.
With wet hands, we make the marzipan figures, put them on a baking tray with non-stick paper and paint them with beaten egg yolk.
Lightly brown the figurines in the oven preheated to 180 degrees for a couple of minutes.
