Ingredients
- 250 gr of Tulip margarine
- 250 gr of icing sugar
- One teaspoon of vanilla extract
- 4 large eggs
- 125 gr of wheat flour
- 125 gr of fine corn flour Maizena
- 80 gr of frozen berries (blackberries, raspberries, blueberries, etc.)
For the filling
- 100 gr of Tulip margarine
- 100 gr of mascarpone
- 200 gr of icing sugar
- 350 gr of fresh forest fruits
- Powdered sugar for dusting
Preparation
Grease two 20 cm molds and line the base. We preheat the oven to 160 °C with a fan, or to 180 °C without it.
We beat the Tulipán margarine and the icing sugar together, until it is a thin and fluffy dough. Add the vanilla extract and beat well.Add the eggs one at a time, beating well after each one you add. Sift the flours on top and mix until everything is well integrated.
Mix the berries and carefully divide the cake mixture between the two molds. Bake for 30 minutes until golden on top and fluffy on the inside.
We pass them from the molds to the rack to cool completely.
To prepare the filling, we take 150 gr of forest fruits and make a puree. Strain it to remove the seeds, and reserve.
We beat the Tulipán margarine well together with the mascarpone. When they are well combined, add the sifted icing sugar and beat again.
We place one of the cakes on a serving plate or a cardboard base for cakes. Add a layer of mascarpone glaze and berries. On top, we place the second cake and we add another layer of mascarpone glaze.
We spread the forest fruits that we have reserved around the upper part of the cake and decorate with the remaining fruits.
Sprinkle a little icing sugar and serve. Hmmmm!
