Ingredients

2 plates of polenta about 2 cm. thick
1 cebolla
200 gr. of mushrooms
200 gr. spinach
100 gr. blue cheese
100 ml. liquid cream
Grated parmesan

Preparation

We begin by frying the chopped onion in a pan with oil, salt and pepper
When it is poached, add the sliced mushrooms
When they release their juice and it evaporates, add the chopped spinach leaves and cook until the vegetables are cooked and without juices.
Separately, we beat the cream with the blue cheese in the blender
Add this cream to the vegetables, reserving a little to paint the polenta later
Cook the vegetables with the cream cheese for a few minutes to thicken.
Meanwhile we put one of the plates of polenta smeared with a little cream to gratin in the oven on non-stick paper
When this toast is ready, we pour it into a mold suitable for its size and spread the vegetables on it
We cover it with the other plate of polenta and paint it again with the cream
Sprinkle with the grated Parmesan and bake in a strong oven until toasted.
