Ingredients

  • 4 thick emperor steaks
  • 1 orange (skin + juice)
  • 1 lime (skin + juice)
  • 1 tangerine (skin + juice)
  • capers or green olives
  • Coriander or fresh parsley
  • ground cumin
  • oil
  • pepper
  • shawl

Preparation

  1. Cut the emperor fillets into thick cubes and season them with salt and pepper.

  2. In a bowl, mix a couple of tablespoons of virgin oil with the grated skins of the three citrus fruits and a little cumin. Season the emperor with that marinade and reserve it for a quarter of an hour.

  3. Finely chop the pickles and cilantro or parsley and mix it with the juice of the three citrus fruits and a little salt. We reserve this sauce.

  4. We pierce the pieces of emperor on the skewers and roast them over and over on a griddle or frying pan to brown them on both sides.

  5. At the last moment, we pour the sauce into the pan and reduce a minute to very high heat.
