Ingredients for 8 rolls: For pasta: 250 gr of flour, 1 glass of water, salt, 1.5 tablespoons of oil. For him filling: 250 gr. cabbage, 1 leek, 1 spring onion, 200 gr. of bean sprouts, 100 gr. of mushrooms, 100 gr. of bamboo, 250 gr. minced meat (whichever you prefer), 4 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 1 egg yolk, salt, oil and pepper
Preparation: To make the dough Mix and knead the flour well, gradually adding the water, salt and oil. We cover the container of the dough and let it rest for half an hour.
We prepare the vegetables from the filling. We cut the cabbage, the leek and the chives into a fine julienne. We drain the bamboo and cut it into strips. We also drain the bean sprouts. We chop the mushrooms well. Sauté the meat well over high heat for a couple of minutes with oil and salt in a pan or wok. After this time, we add the vegetables and continue cooking everything for 5 more minutes, except the bean sprouts, which we add at the last minute. We add the soy sauce, vinegar, salt and pepper.
We cook the dough in the following way. We spread a frying pan with oil and spread the dough on the bottom as if it were some crepes. We let it set over a low heat. We take out the tortilla and cover both sides with a damp cloth. We do the same with the rest of the dough.
We cut the 8 tortillas into squares and cover them with the filling. We roll up the pasta, closing the edges well with the beaten egg and fry the rolls in plenty of hot oil until golden brown. We drain them on paper and serve with sweet and sour sauce also homemade.
