Ingredients

175 g whole wheat flour
175 butter g
1 tsp. chemical yeast
1 pinch of salt
75 g honey
Zest of a lemon
1 teaspoon ground ginger or ginger extract (available in health food stores)
40 g candied ginger
2 beaten eggs
For the coverage: 15 ml. of honey and the juice of a lemon

Preparation

Preheat oven to 180ºC.
Melt the butter and honey in a saucepan.
Add the lemon zest and mix well. Remove from the heat and let cool.
When the mixture is cold, add the rest of the ingredients and stir well with a wooden spoon or spatula.
Butter a mold and pour the mixture,
Bake for half an hour or until a toothpick inserted in the center comes out clean.
Prepare the topping while it is baking.
Heat a saucepan with honey and lemon juice.
