In Spain there are several types of melon. Perhaps the best known is Piel de Sapo but we have made today's recipe with cantaloupe melon, another lesser known but very aromatic variety.
As a base we have used coconut milk flavored with vanilla but, if you want, you can use cinnamon, lemon or tonka bean to give it a very special touch.
