Seafood rice in Thermomix

Preparation

1. Firstly we peel the prawns and reserve the heads, which we put in the Thermomix glass with a little oil to fry them for 10 minutes at varoma temperature and speed 1.

2. Put the mussels and clams in the varoma container and add the water. We program 15 minutes, in varoma temperature at speed 4. We strain the seafood cooking broth and reserve all these ingredients.

3. Pour the langoustines and the bodies of the prawns into the glass. Add a little oil and fry for 15 minutes, at varoma temperature, turn to the left and speed with a spoon. The seafood is ready, we remove it from the glass and leave the oil to continue with the paella.

4. Add the onions and garlic to the glass and chop programming 6 seconds at speed 5 (no longer turning to the left). Next, we fry for 4 minutes, at 100 degrees and speed 1.

5. Then add the chopped cuttlefish with a little salt and cook for 5 minutes, at varoma temperature, turning to the left and spoon speed.

6. Now add the tomato and the spices (saffron and paprika) and program 5 minutes with the same previous program.

7. We put the rice through the bowl and cook everything together for 5 minutes at a temperature of 100º, turn to the left and spoon speed.

8. We now pour the hot stock through the bowl and cook with the same program for another 10 more minutes.

9. We served the stewed rice with the seafood that we had reserved.

10. To your liking: If you want to eat the rice drier, you can cook it over high heat for 5-10 minutes or bake it at a high temperature so that part of the broth evaporates.
