6 yolks
150 gr. sugar
100 ml. From mineral water
20 gr. corn flour
200cl. milk
Egg whites 2
200 ml. whipping cream
50 gr. sugar
a little bit of salt

Preparation

First we make a somewhat thick syrup with water and sugar over low heat
When it is ready, remove it from the heat and let it rest for a minute.
Then we add the yolks and mix with the syrup
We will see how the mixture thickens and becomes shiny thanks to the fact that the yolks have set
Spread the yolk on a plate and let it cool.
Meanwhile we boil the milk with the dissolved cornmeal and thicken
Add it to the yolk cream and beat.
Whip the cold cream and the egg whites with a little salt separately, dividing the 50 grams of sugar between the two
Now we only have to mix the yolk cream with the cream and the meringue
Refrigerate a couple of hours before serving
The freezer is also useful if we want a semi-frozen mousse.
