200 gr. of round rice
30 ml. squid ink
fish soup
2 tablespoons of concentrated tomato paste
1 cebolla
3 cloves of garlic
peppers
2 eggs
150 ml. liquid cream
olive oil
bread crumbs
eggs
saffron
salt and pepper
some fish or shellfish

Preparation

First, sauté the onion and garlic in olive oil over low heat.
When they are tender, add the rice and squid ink and cook for a few minutes
Next we add the fish broth and cook for about 15 minutes checking if it is necessary to add more broth, since we should have a rice similar to risotto
After the time has elapsed, add the tomato paste, saffron and paprika and cook for another 5 minutes.
At the last minute, add the cream and eggs, stirring constantly, and cook over low heat until the mixture thickens.
We will have put the chosen fish or shellfish at the appropriate moment according to its cooking time.
Set aside the dough to cool
Now we can make the croquettes and coat them in the breadcrumbs and egg
