Ingredients

  • 500 gr. pasta
  • 2 eggplants
  • 400 ml. homemade tomato sauce
  • 200 gr. of salty ricotta (salty and hard white cheese
  • substitutable for the Greek feta)
  • oil
  • fresh basil
  • shawl

Preparation

  1. We start by cutting the aubergines with their own skin into thin slices, salt them and fry them in oil in a pan or sauté them

  2. We drain them of oil.

  3. Boil the pasta in plenty of salted water and drain it when al dente

  4. Meanwhile we heat the tomato sauce and crumble or grate the cheese.

  5. We distribute the pasta and the aubergines on the plates, we sauce with the fried tomato, decorate with the fresh basil and sprinkle the ricotta.
