Roscón de Reyes cake, recycling Christmas

Were you so sweet that you bought too much roscón and you have left over? As in our recipe for pudding, we will take advantage of the roscón de Reyes that we have left to prepare another cake. We will make one of those bread puddings so typical of English cuisine, very easy to make and quite rich thanks to its juicy and tender texture.

If you have leftover Roscón de Reyes, you can prepare this Cake taking advantage of it. It is very rich!

Ingredients

  • 400 gr. roscón de reyes (no filling)
  • 3 eggs
  • 1/2 cup of sugar
  • 1 teaspoon vanilla essence
  • 1 and 1/2 cups of milk
  • 3/4 of Cup of whipping cream
  • two handfuls of natural fruit, dried or the roscón itself
  • caramel syrup

Preparation

  1. Cut the roscón into slices and distribute them on a greased baking sheet or covered with special paper.

  2. We beat the eggs, half a cup of sugar and vanilla in a bowl until well blended. Immediately add the milk and cream and beat again. Pour this mixture on the tray in which we have distributed the roscón. Let stand for 30 minutes or until the donut has absorbed most of the milk mixture.

  3. Pour the fruit over the mixture and place it in a preheated oven at 160 degrees for 40 or 45 minutes or until the center of the cake is set and the surface is golden and puffy.

  4. When we remove the cake from the oven, we cover it with caramel and serve cold or warm.
