Eggless potato omelette

Recently a reader asked us for recipes that did not include eggs, since her son has an allergy. For her, and for all the moms who are in the same situation, we want to explain today how to make a fantastic omelette, potato or whatever we want, using alternative ingredients to the egg.

The trick is to substitute the beaten egg for a mixture of chickpea flour and soy milk. If you have difficulty finding chickpea flour in your usual supermarket, you can buy it online at Twenga, where they have a wide range of this type of flour.
