So that we have a much creamier texture and as if it were an ice cream cream, what we will do is freeze the evaporated milk the day before.

1 bottle of Ideal evaporated milk
150 g sugar
400 gr of frozen raspberries

Preparation

We remove the evaporated milk from the freezer about 20 minutes before starting the recipe. In the Thermomix glass we put the sugar and crush it at speed 7 for 30 seconds.
Add the raspberries and the juice of the two lemons and blend at progressive speed 5-10 for another 30 seconds. We remove the contents of the glass, and without washing it we add the frozen evaporated milk and crush it at speed 7 for 30 seconds. We put the butterfly on the blades and we mount the milk for 3 minutes at speed 3 to 5 until we see that the volume has doubled.
We add the crushed raspberries and mix everything for 30 seconds at speed 3.
We put the cream in the containers and we take it very cool, decorating with some raspberries on top.
