Ingredients

  • 400 grams of honey
  • 200 grams of sugars
  • 1 egg white
  • 700 grams of peeled and toasted almonds
  • lemon zest

Preparation

  1. We grind the almonds without completely turning them into powder.

  2. Put the honey and sugar in a saucepan and heat it over low heat, stirring with a wooden spoon until they are well dissolved and we have a thick mixture.

  3. We then move away from the fire.

  4. Beat the egg white foamy and add to the honey and sugar mixture

  5. Mix very well and stir constantly for 10-15 minutes and then return to a simmer until the mixture begins to caramelize, taking on a darker color.

  6. Add the almonds to the mixture and the zest of half a lemon

  7. Mix well and let cool for 5 minutes.

  8. Pour the pasta into molds lined with non-stick paper so that the nougat is about two fingers thick

  9. Let cool for 3 or 4 hours to take consistency

  10. Unmold and cut to taste with cookie cutters or bars.
