The roasting time of the chicken will depend on its size, but in principle with 40 minutes of cooking a medium-sized chicken should be done.
My mother likes to poach the potatoes with a little onion in a pan before adding them to the chicken so she doesn't have to add excess liquid to the chicken pan and makes sure they are well done.
- 1 pollo
- 2-3 apples
- 4 potatoes
- 1 cebolla
- 1 glass of white wine
- olive oil
- shawl
- pepper
- Season the chicken with salt and pepper.
- Wash the apples, cut one of them into 4 pieces and place it inside the chicken.
- Place the chicken on an oven safe tray with a drizzle of olive oil and the white wine. The other apple can be left whole making a couple of cuts to make it well or cut into quarters.
- Place in the oven preheated to 180ºC and bake for about 40 minutes.
- While the chicken is cooking in the oven, peel the potatoes and dice them. Cut the onion into julienne strips.
- In a frying pan with olive oil, poach the potatoes together with the onion until we see that they begin to be soft. Drain and reserve.
- When there are about 10-15 minutes to go, take the tray out of the oven and add the potatoes with the onion that we had poached so that everything is done together.
- If at any time we see that we lack some liquid to cook the chicken and potatoes, we can add a little water or broth.
