Preparation

First we prepare the aubergine to remove the bitterness. It is about cutting them into thin slices with skin and adding salt, letting them rest for an hour in a colander.
Next we prepare the batter. We beat the egg separately and on the other hand we mix the flour with a little yeast.
When the aubergines are ready, dry them well and pass them through the egg and flour.
Fry them in very hot oil and let them drain on absorbent paper.
Finally we cover them with a drizzle of honey. It combines well with both flower honey and cane honey, although the latter is a little more bitter and less sweet for children.
