I was looking forward to a special snack but one that didn't require much preparation. It is a simple cake for which you only have to make a dough; Before taking it, we will cheer it up by smearing it with jam and coconut. I liked its somewhat compact texture and the special touch of the jam topping (I've put it with apricot) and coconut.

100 gr. unsalted butter
100 gr. sugar
4 eggs (yolks and whites separated)
100 gr. grated coconut
50 ml. muscatel wine
200 ml. milk
175 gr. flour with yeast incorporated
1 jar of jam of your favorite taste
more grated coconut to garnish

Preparation

First we make a cream by beating the butter and sugar.
Then add the egg yolks, one by one, without stopping beating
Add the grated coconut, wine and flour, kneading continuously
Finally we added the milk to finish homogenizing the dough.
Now we beat the egg whites until stiff and incorporate them into the dough, mixing with enveloping movements.
Pour this dough into a round mold greased with a little oil or butter and floured
We bake at about 180 degrees for about 50 minutes
The cake must be swollen, spongy and almost dry inside.
Once cold and unmold, we cover it with apricot jam and sprinkle with grated coconut.
